Italian Meatballs and Spaghetti :9


Ingredients
  • 1 pound Ground meat
  • 2 tablespoons Plain dry bread crumbs
  • 1 Egg
  • 1/2 cup Chopped onion
  • 1 tablespoon Vegetable oil
  • 1 can (15z) tomato sauce
  • 1 can (14.5z) whole tomatoes undrained and crushed
  • 1 tablespoon Grated parmesan cheese
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Pepper
  • 1 can (6oz) tomato paste
  • 1 1/2 teaspoons Basil
  • 1 1/2 teaspoons Sugar
  • 1/2 teaspoon Garlic powder
  • 1/2 teaspoon Oregano
  • 2 tablespoons Grated parmesan cheese
  • Hot cooked spaghetti


Directions:
  • In bowl, combine ground beef, bread crumbs and egg. Shape into 20 1-1/2″ balls; place on baking sheet. Bake at 375 for 25 mins; drain. In large saucepan, saute onions in oil until tender. Stir in remaining ingredients except cheese and spaghetti. Simmer while meatballs bake. Add drained meatballs to pan; simmer, covered, an additional 20 mins. Stir in cheese and serve over spaghetti.

Banana Foster Bread Pudding



Ingredients
  • 1/2 C. - Butter (room temp)\
  • 1 1/2 C. - Brown Sugar
  • 3 - Eggs
  • 1 lb. - Bread (I used a brioche roll)
  • 2 C. - Heavy Cream
  • 1 1/2 C. - Milk
  • 1 C. - Cream De Banana Liqueur
  • 2 Tsp. - Ground Cinnamon
  • 1 Tsp. - Vanilla
  • 6 - Bananas (sliced)
OPTIONAL TOPPING:
  • 2 - Bananas (sliced)
  • 1/4 C. - Butter
  • 1 C. - Brown Sugar


Directions:

1) Preheat oven to 325 degrees. In a large bowl, cream together the butter and sugar. Beat in eggs then stir in the cream, milk, liqueur, cinnamon, vanilla and bread. Once well combined fold in the sliced bananas carefully. Pour into a 13×9 baking dish and cook for 90 minutes or until completely set. This can be served hot, room temp or cold. It can be topped with vanilla ice cream, whipped cream or as I did with the following topping.
2) In a sauce pan over medium high heat melt the butter then add the brown sugar. Once melted add the banana slices and stir gently, cook until the syrup has reduced and the bananas have caramelized. This will take about 5-10 minutes, be careful to not let your sugar burn. When ready ladle some of this hot sauce over each serving of bread pudding.

Spaghetti alla Carbonara

Ingredients
½ pound pancetta or bacon
4 garlic gloves

3 tablespoons extra virgin olive oil
¼ cup dry white wine
2 large fresh eggs
¼ cup cream
¼ cup romano cheese
½ cup freshly grated Parmigiano-Reggiano cheese
Fresh ground black pepper
2 tablespoons chopped parsley
1 ¼ pounds of spaghetti
3/4 or 1 package peas (optional)

Directions:

1. Cut the pancetta or bacon into ¼ wide slices.
2. Lightly mash the garlic with the flat end of a chef’s knife, enough to split it and loosed the skin, which you want to toss.
3. Put the garlic and olive oil into a small sauté pan and heat over medium high until garlic turns a deep golden brown. Remove and throw away the garlic.
4. Put the pancetta slices into the pan, and cook until lightly brown and crisp at the edges. Slowly add the white wine, and let it cook a minute or two until the alcohol burns off.
5. Break the 2 eggs into the bowl in which you will be serving. Beat them with a fork then add the grated cheeses, a healthy grinding of pepper, and the chopped parsley. Mix thoroughly.
6. Briefly reheat the pancetta over high heat then remove from heat.
7. Add a small amount of the pancetta drippings to a small amount of the just cooked spaghetti and mix well. Add to the bowl and toss rapidly, taking care not to cook the eggs. Toss in the rest of the pasta, cream (if using), pancetta with its drippings, and peas, and toss thoroughly.
8. Serve at once.

Panna cotta is a luxurious creamy Italian dessert that is dead simple to make. Milk is heated until bubbles just begin to appear on the side of the pan. Gelatin, vanilla beans, and sugar are added and then the mixture is poured into individual cups. This dessert needs to time to set in the refrigerator before serving so plan accordingly. To finish the panna cotta, serve with a drizzle of homemade berry sauce.

INGREDIENTS FOR PANNA COTTA:
2 sheets of gelatin
1/2 cup scant milk

2 1/4 cups heavy cream
1/2 cup sugar
1 vanilla bean, slit lengthwise
INGREDIENTS FOR BERRY SAUCE:
1 pint of your favorite berries or cherries (fresh or frozen)
1/4 cup or less sugar (depending on sweetness of berries)
1/4 cup of water
optional- mint, lemon juice, lemon zest, etc

Directions:

1) Fill a bowl with water, add the gelatin and let is soak. Pour milk into a pan & bring to just below simmering, then remove the pan from the heat. Do NOT let it boil. Drain & squeeze out the gelatin & add the milk. Pour the cream into another pan, add the sugar and vanilla bean and bring to a boil over low heat, stirring constantly. Immediately remove the pan from the heat, remove the vanilla bean and stir in the milk mixture.
2) You can put the mixture into any kind of ramekin, mold, cup, you like. Rinse your ‘glass’ in ice-cold water, shaking out any excess water & fill with the milk mixture. Chill in the refrigerator for several hours until set (at least 3-4 hours). Turn out onto a serving dish & serve with fruit sauce or chocolate sauce.
3) Put the berries, sugar & water in a pot & simmer for 15-20 minutes until the fruit breaks down & forms a syrup.
4) Drizzle over the top of the panna cotta once on the serving plate.
